RECIPE
I
noticed yesterday that Elderfowers here at Lauderdale are about to be
in full bloom which means its time to make cordial. A wonderful
refreshing drink.
ELDERFLOWER CORDIAL
about 15 large elderflower umbels (heads
900 gr sugar
1 lemon sliced
40 g citric acid
500 ml boiling water
Put
the elderflowers, sugar lemon and citric acid in a large heat proof
bowl and stir in the water. Cover and leave in a cool place for 4 days.
Strain through muslin and pour into bottles. Keep in a cool dark place. Add iced water or soda water to serve.
